McCoy's dancing career has been running for 16+ years where she have been trained in ballet, contemporary dance, hip hop, aerial dance, and Irish dance. McCoy began competitively Irish dancing at eight years old, where throughout her competitive career, she quickly moved up the ranks to compete both locally and nationally, as well as globally. Ultimately, she finished her competitive Irish dancing career in 2021 ranked 55th in the world, a 5-time world championship qualifier, a 7-time North American championship qualifier, and top 10 in the Western United States while dancing with the Brimhall Academy of Irish Dance in Oregon, USA. 

Her professional dancing career began at a young age performing in corporate entertainment; McCoy had the opportunity to dance in her first professional show with The Gothard Sisters. In 2019, McCoy auditioned for Studio2Stage: The Irish Music and Dance Experience where she was accepted as a senior cast member. Working closely with choreographers, Andy O'Reilly, Tyler Schwartz, Aidan Garvey, and Miriam Lee, McCoy went on to complete ten full days of rehearsals in New Jersey, USA, performing in flash mobs in Times Square, New York City, performing for CAPEZIO Inc., and dancing in both a matinee and finale show. In 2022, McCoy was appointed Dance Captain as a returning senior cast member with Studio2Stage. McCoy has danced with the Riverdance Summer School for three consecutive years being mentored by principal dancers, Michael Gardiner, Anna Mai Fitzpatrick, and Maggie Darlington.

While studying at the Irish World Academy, she has had the privilege to work with mentors such as Breadán de Gallaí and James Greenan. Additionally throughout her time at the Academy, McCoy has been fortunate to participate in various workshops, notably, working with the American Company of Irish Dance. Currently, McCoy in actively training in both Irish and aerial dance, with her aerial dance training commencing in 2022 with the Irish Aerial Creation Centre being mentored by professional aerialists with Fidget Feet: Ireland's National Aerial Dance Company. McCoy continues to dance in shows, occasionally dancing in corporate gigs around Ireland.
